Glucose After A Meal, In Plain Language

Almost every page in this category assumes you already know this and then uses the words anyway. Here is the short version, in order.

You eat carbohydrate. Enzymes in the mouth and small intestine break it down into simple sugars, mostly glucose. Those cross into the bloodstream. Blood glucose rises. This is supposed to happen; it is not a malfunction.

The pancreas responds. Beta cells release insulin, roughly in proportion to how fast and how far glucose rose. Insulin is the signal, not the transport.

Cells open up. Insulin binding tells muscle and fat cells to move glucose transporters to their surface. Glucose leaves the blood and goes into the cells to be used or stored. Blood glucose comes back down.

Where the supplements claim to sit. Ingredients studied in this category are generally studied at one of three points: slowing the breakdown of carbohydrate so the rise is gentler, improving how well cells respond to insulin, or supporting the ordinary machinery with nutrients like Chromium that have an established role in it.

What changes the curve far more than any of that. What the carbohydrate came with. Fat and protein and fibre alongside it flatten the rise noticeably. A walk afterwards does the same. The size of the portion does more than all of it. None of this is news and all of it outranks a 500 mg capsule.

Why the flat patch afterwards happens. A steep rise tends to prompt a large insulin response, which can overshoot slightly on the way down. That dip is the familiar afternoon sag. It is also why people who change what lunch is made of often notice the sag before they notice anything else.
